Hulled Millet is a whole grain; mildly sweet and nutty in flavor, it is also light and fluffy when cooked (comparable to couscous). One cup of millet cooks in 1 ½ cups of water (or stock) and can been prepared in many of the same methods as typical grains – in both baking and cooking applications.
